VELDSLA SALAD
Veldsla is Dutch for Valerianella Lacusta
- Valerianella Lacusta
(a.k.a. lamb's lettuce, mâche, rapunzel)
- Tiny sweet cherry tomatoes cut in halves
- Grated Grana Padano* (be generous)
- Pine nuts (more than just for decoration!)
- Just a drop of Balsamic vinegar (too much will spoil the taste)
- Extra virgin olive oil (the one you would eat with bread)
*) I guess Parmigiano-Reggiano would work as well, but its taste might be too strong for this salad: Valerianella Lacusta is rather delicate. Though I didn't try it...
