CLASSIC STEAK TARTARE

  • Chop 1 medium red onion
  • Separate 2 large egg yolks
  • Mix the above with
    • some olive oil
    • 2 teaspoons capers with juice
    • 3 teaspoons Kaapse mustard from Adriaan
      (in the US: half honey mustard not spicy, half standard yellow mustard)
    • a bit of Warcestershire sauce
  • Mince 250-300 g beef and add the mixture
  • Eat immediately
